It's an older game, but I'm willing to bet you would love Transport Tycoon Deluxe. I'm not sure where you could download it from (legally). There is an open source remake of it available at: http://www.openttd.org/index.php
The best choice is to go with games from Paradox: Virtoria, Europa Universalis and such. There is very nice and deep economy simulation. If you looking for online experience, try out Virtonomics. Probably the best game about economy out there.
